Guinness Beer Float

Guinness stout and ice cream come together to make the ultimate boozy dessert drink. Just picture creamy vanilla ice cream (with little chocolate chips mixed in!) plopped into a glass of frothy stout and topped off with a drizzle of chocolate sauce. It’s rich, sweet, and totally irresistible.

Ingredients & Substitutions

  • Guinness – Using the extra stout gives the float an extra flavor boost, but any Guinness or stout beer will work.
  • Ice cream – We used vanilla with chocolate chip ice cream, but anything that goes well with chocolate/vanilla should go well with the stout. I recommend keeping it sort of basic though.
  • Chocolate syrup – This is totally optional, but it will take your float to the next level. We just use regular Hershey’s syrup.

Making changes to a recipe can result in recipe failure. Any substitutions listed below are simple changes that I believe will work in this recipe, but results are not guaranteed.

How to make a Guinness beer float

Scoop ice cream. Add 2-3 scoops of ice cream to the bottom of a tall glass. We used vanilla with chocolate chips, though plain vanilla would be great in this.

Pour beer. Slowly pour stout beer over ice cream. Allow for some of the fizz to settle, then top it off with a bit more beer and a drizzle with chocolate sauce.

What beer is best for a beer float?

We chose to use guinness for this, but really any stout would work great. Any chocolate or coffee stouts pair great with ice cream. A porter would also work great for this recipe!

Ingredients 

  • 2-3 scoops chocolate chip ice cream
  • 5 – 6 ounces Stout beer, such as Guinness
  • Chocolate sauce, for garnish

Instructions 

  • Add ice cream to a tall glass.
  • Pour stout beer over ice cream. 
  • Drizzle with chocolate sauce.
