- Fresh ginger root – This can be found in the produce section of your grocery store. You don’t have to peel it, but you can. Just make sure to give it a good rinse before slicing it.
- Honey – Use good quality honey for this – preferably a local one that has a strong honey flavor. Avoid any products that are labeled as honey but have more than one ingredient. This is a sign that the honey is not true honey, but more of a processed product and it won’t have the best taste.

How to make homemade honey ginger syrup
Simmer ingredients. Add honey and water to a large saucepan over medium heat. When honey has dissolved, add ginger pieces and reduce the heat. Let simmer for approximately 30 minutes over low heat. If you use any higher heat you risk the sugars caramelizing.
Bottle the syrup. Remove from heat and allow syrup to cool. Remove ginger pieces and carefully transfer to an airtight container for storage. Store in the refrigerator until ready to use, for up to 2 weeks.
To extend the shelf life (still refrigerate though!), add 1 tablespoon of vodka or other high proof spirit to the bottle.

When stored in the fridge, homemade simple syrup will stay fresh for up to 2 weeks. Make sure to store in an airtight container, mason jars work great. To keep syrup as fresh as possible, remove any mix ins (such as ginger pieces) from the container within 24 hours.
Always keep homemade simple syrups in the refrigerator. The refrigeration helps inhibit bacterial growth and it helps to prolong its shelf life. Homemade syrups will not have the same preservatives as commercial products, so refrigerating them helps maintain their quality and freshness. If you notice any changes in color or texture, it is best to toss it and make another batch.
