
Why I love this hibiscus pineapple bourbon cocktail
Normally, I gravitate towards bourbon and whiskeys in the winter months, but lately I’ve been inspired by tiki cocktails so I thought I’d give bourbon a tropical twist while I embrace the warm weather ahead.
My sister recently came back from Hawaii raving about this pineapple hibiscus tea that she had while on vacation, and even though I hadn’t tried it myself, I used it as inspiration for this cocktail.
We already had hibiscus syrup on hand, I paired it with a little pineapple juice and some fresh mint. It was a dreamy combination and it made the most beautiful purple cocktail.

How to make a hibiscus pineapple bourbon cocktail
Muddle the mint. In a cocktail shaker, muddle 1 lime wedge, a few mint leaves and 1 ounce of simple syrup.
Shake the cocktail. Add the remaining ingredients to the shaker and fill with ice. Shake until cold.
Garnish and serve. Strain into a cocktail glass filled with ice. Garnish with a sprig of mint and a lime wedge.

Ingredients
- 1.5 ounces bourbon
- 1.5 ounces pineapple juice
- 1 ounce hibiscus syrup
- 1 lime wedge
- 3 – 4 mint leaves
- For garnish: mint sprig (lime wedge)
Instructions
- In a cocktail shaker, muddle 1 lime wedge, a few mint leaves and the simple syrup until fragrant and the juices have been released from the lime.
- Add the remaining ingredients to the shaker and fill with ice. Shake until cold, about 30 seconds.
- Strain into a cocktail glass filled with ice.
- Garnish with a sprig of mint and a lime wedge.
