Why we love this pot of gold cocktail
Celebrating St. Patrick’s day by drinking green beer can get a little old, right? This classy cocktail is a perfect alternative for your Irish festivities, but of course it can be enjoyed anytime of year.
This year, we’ve been having a lot of fun with different whiskey cocktails, like the Irish maid and the Irish whiskey mule. We’ve also been enjoying boozy shamrock shakes for a little bit of nostalgic fun.
If you’re looking for something less subtle, try baby Guinness shots, Irish breakfast shots, or even the Irish trash can, which is basically a party in a glass. If you’re looking for a more traditional cocktail, you can always try the black velvet cocktail which blends Guinness and champagne.

Ingredients & substitutions
- Irish whiskey – Use your favorite Irish whiskey here, we used Jameson, but there are tons of great options out there.
- Honey – Use good quality honey for this – preferably a local one that has a strong honey flavor. Try to avoid products that are labeled as honey but have more than one ingredient.
- Lemon juice – Fresh squeezed citrus is best for this recipe, but this is especially true when a cocktail has limited ingredients.

How to make an Irish gold rush cocktail
Make the simple syrup. Bring honey and water to a boil in a large saucepan. Reduce heat to medium low and simmer until honey and water have combined. Remove from heat and transfer to an airtight storage container when it has cooled enough.
Fill a cocktail shaker. Add ice and remaining ingredients to a cocktail shaker. Shake vigorously until well chilled, or about 30 seconds. Strain over ice in a chilled cocktail glass rimmed with edible glitter. Serve with a twist of lemon.

- 3/4 oz honey simple syrup
- 3/4 oz fresh lemon juice
- a pinch of edible gold glitter (optional)
- Lemon twist (for garnish)
- ½ cup honey
- ½ cup water
Instructions
- Combine honey and water in a large saucepan over medium high heat. Bring ingredients to a boil then reduce to medium low. Simmer until honey and water have combined well (it will look like oil and water until it is combined well).
- Fill a cocktail shaker with ice. Add remaining ingredients and shake until well chilled, or about 30 seconds.
- Strain and serve with a lemon twist over ice.
