Ingredients & Substitutions
- Mezcal – If you don’t have mezcal, you can substitute a good tequila.
- Anchos Reyes liqueur – if you can’t find this ingredient, you can substitute an orange liqueur.
- Egg white – This is an optional ingredient. It makes the cocktail creamy and frothy, but you can totally skip it. If the thought of using raw egg whites in your cocktail freaks you out, you can use pasteurized egg whites.
How to make a mezcal sour
Dry shake. Combine the ingredients in a cocktail shaker without ice. This allows the egg whites to do their magic and creates a creamier, frothier drink. You want to do this for about 45 – 60 seconds.
Shake again. Remove the lid and add ice to the shaker. Then, shake until cold. This should take about 30 seconds.
Garnish and serve. Strain the cocktail into your prepared glass and garnish with a fresh rosemary sprig or a grapefruit slice (or both) before serving.
