Negroni Sbagliato

Created by accident, the negroni sbagliato is a variation of the classic negroni light and bubbly. It’s a great alternative to its traditional counterpart, but still features those bitter and sweet undertones from the Campari and vermouth still shine bright.

Why we love this negroni sbagliato

  • I don’t think there’s a variation the classic negroni that I don’t like (I’m looking at you White negroni), and this cocktail is no exception.
  • The word sbagliato translates to wrong or mistake. By swapping gin for prosecco in this negroni recipe, you get a lighter and more bubbly version of a negroni.
  • It’s similar to an Aperol spritz, but you get the more pronounced bitter flavor from the Campari that’s super satisfying to a negroni lover.

Ingredients & substitutions

  • Sweet vermouth – I like use red vermouth, but you can also use white, just don’t go from dry vermouth here. You want that balance of sweetness.
  • Campari – No substituting here. It’s not a negroni if it doesn’t have Campari.
  • Prosecco – Any dry-ish sparkling wine will work, but this drink is traditionally made with Italian prosecco.

How to make a negroni sbagliato

Mix liqueurs. Stir the Campari and vermouth together in a glass with ice until they’re mixed and cold.

Top with prosecco. Using the handle of a bar spoon, pour the prosecco into the glass. Gently to incorporate. Make sure you’re using chilled prosecco so that you don’t need to stir too much to get it cold.

Garnish and serve. Express a bit of oil from an orange peel over the glass and add it to the glass for garnish. Serve immediately.
