How to make peach mojitos
Make the peach purée. Place you peaches (peeled or not) into a food processor or blender and process until smooth. Store in an air-tight container for up to 2 days, or freeze for later.
Muddle the mint. In a cocktail shaker, combine the mint, lime juice and simple syrup. Muddle until the mint is crushed and fragrant.
Shake the cocktail. Fill a highball glass with ice and add the peach purée. Add some ice to the shaker, followed by rum, and shake until cold. This should take about 15 – 20 seconds. Strain over the peach purée.
Garnish and serve. Top with club soda and garnish with a sprig of fresh mint and a lime wedge before serving.

While it is traditionally made with silver rums, if you want to try different version you could use gin or vodka. I would keep with a clear liquor, but a dark rum would work, too.
Malibu is a rum. It is sweetened and coconut flavored but yes it is a rum. If you use a flavored rum in this recipe it will possibly make it even sweeter. Adding a flavored rum will definitely change the overall flavor of this recipe.

Ingredients
For the peach purée:
- 1 pound fresh or frozen peaches, pits removed
For the mojitos:
- 8 fresh mint leaves
- 1/2 ounce lime juice
- 1 ounces simple syrup
- 1 1/2 ounces rum
- 2 ounces peach puree
- Club soda or sparkling water
Instructions
- Make the peach puree: place peaches in a food processor or blender and purée until smooth.
- In a cocktail shaker, muddle the mint leaves with lime juice. Add ice, simple syrup and rum. Shake until cold.
- In a highball glass filled with ice, add peach puree. Strain cocktail into glass and stir to combine. Top with club soda.
