Tipsy Mermaid
Take a trip to the tropics with the tipsy mermaid – a beautiful, colorful drink featuring flavors of pineapple, melon liqueur and blue curaçao. This tropical rum cocktail is as fun to make as it is to drink. Garnish with a lime and cherry before serving.
Why we love the tipsy mermaid
The tipsy mermaid drink is fun, bright and colorful. Plus, it’s tropical and fruity, which is perfect for our sweet cocktail loving friends. If you want to impress, this cocktail pour will do it. The blue curaçao sinks to the bottom creating a beautiful ombre effect that your guests will love.
We love a good rum cocktail here, and if that’s your thing too, make sure you try my passion fruit daiquiri, peach mojito and pina colada with coconut milk. But, if you want to try something really cool, give the Polynesian pearl diver a chance.

Ingredients & substitutions
- White rum – You can use dark rum for this cocktail if it’s all you have, but white rum allows the colors in the drink to really stand out, and it gives the drink a more subtle flavor profile.
- Midori – This melon liqueur is used for its bright green color. You can use a generic substitute if you have one, but you’ll definitely want the bright green option.
- Pineapple juice – The yellow of the pineapple juice enhances the green color of the Midori and works with the blue curaçao rather than against it when the drink eventually gets stirred. If you want to swap this, I would recommend lemonade over orange juice.
- Blue curaçao – Don’t substitute this. The blue color is important in this drink and without it you won’t get that beautiful blue swirl.

How to make a tipsy mermaid drink
Mix the base. Fill a cocktail glass with ice – I use a highball for extra height. Add the white rum, pineapple juice and Midori. Use a cocktail spoon to stir until cold.
Create layers. Turn the spoon over and place it along the edge of the glass. Then slowly pour the blue curaçao down the side of the glass. It should sink on its own thanks to the sugar content of the liqueur.
Garnish and serve. Top with a lime wedge and maraschino cherry before serving. If you have one, throw in a cocktail umbrella for extra points.
Go ahead. Have another drink!
