- Vanilla bean – A vanilla bean is going to have the best flavor, but the next best choice is pure vanilla extract.
- Sugar – Plain white granulated sugar is best, but raw or brown sugar will work with a slight change in taste.
- Water – Regular tap water is fine, but if you have filtered water it might taste even better. Use your best judgment based on what kind of water you have.
How to make vanilla syrup.
Make the syrup. Combine 1 cup of sugar and 1 cup water in a large saucepan. Turn the heat to medium and allow the sugar to dissolve, stirring occasionally to prevent the sugar from clumping.
Infuse the vanilla. Split a vanilla bean lengthwise, so that the beans are exposed, and place it in a mason jar. Pour the hot simple syrup into the mason jar.
If you’re using extract, add it to the syrup after placing it in the jar, and stir to combine.
Store for later. Allow the syrup to cool completely to room temperature. Then, cover the jar and refrigerate until you’re ready to use the syrup.

No. You technically don’t have to heat the water at all, but heat helps the sugar to dissolve more quickly. The water definitely doesn’t need to be boiled.
Yes. Simple syrup should be refrigerated until you’re ready to use it and will last for up to 1 month. Flavored syrups will last for a shorter amount of time, typically 2-3 weeks. If the syrup becomes cloudy, it’s time to discard it.
When stored in the fridge, homemade simple syrup will stay fresh for up to a month. Make sure to store in an airtight container, mason jars work great. To keep syrup as fresh as possible, remove any mix ins from the container after 24 hours.
