Roasted Strawberry Margarita on the Rocks

Skip the blender and serve your strawberry margaritas on the rocks. Roasting the strawberries before muddling them brings out a subtle sweetness that works so well with the tequila and agave in this strawberry margarita recipe. Plus, you can easily make a pitcher to serve a crowd.

Ingredients

  • 8 ounces silver tequila
  • 1/4 cup Cointreau (or other orange liqueur)
  • 1/4 cup lime juice
  • 1/4 cup agave nectar
  • 1 pound strawberries (tops removed)

Instructions

  • Preheat oven to 400˚F and place strawberries on a baking sheet. Roast strawberries for about 20 - 25 minutes, or until strawberries have softened. Remove from oven and transfer to a mason jar or other airtight container. Refrigerate until ready to use.
  • In a large pitcher, combine tequila, Cointreau, lime juice and agave nectar. Add ice and stir to combine.
  • Muddle the strawberries and stir into the pitcher before serving.
