Inspired by the cocotini from Only Murders in the Building, this coconut martini is creamy and sweet, with just the right amount of drama. Made with vanilla vodka, coconut rum and pineapple juice, this cocktail is garnished with shredded coconut and a splash of grenadine for color.
- 2 ounce vanilla vodka
- 1/2 ounce coconut rum
- 1 ounce pineapple juice
- 1 ounce coconut milk
- 1/2 ounce cream of coconut
- grenadine (optional)
- shredded coconut (for garnish)
Prep your glass. Dip the rim of a martini or coupe glass in a bit of cream of coconut or simple syrup, then into shredded coconut. Then, pop it into the freezer until you're ready to make the cocktail.
Mix the cocktail. Fill a cocktail shaker with ice. Add vanilla vodka, coconut rum, cream of coconut, pineapple juice, and coconut milk. Shake until well chilled - about 30 seconds.
Garnish and serve. Strain into your prepared glass. Slowly pour a splash of grenadine down the edge of the glass using the back of a bar spoon, allowing it to settle into a layer at the bottom of the glass.
