Refreshing and summery, this peach mojito adds perfect summer peaches to a classic summer cocktail. Peach slices muddled with fresh mint leaves and a simple syrup are sure to make this summer favorite pop with sweetness.
For the peach purée:
- 1 pound fresh or frozen peaches (pits removed)
For the mojitos:
- 8 fresh mint leaves
- 1/2 ounce lime juice
- 1 ounces simple syrup
- 1 1/2 ounces rum
- 2 ounces peach puree
- Club soda or sparkling water
Make the peach puree: place peaches in a food processor or blender and purée until smooth.
In a cocktail shaker, muddle the mint leaves with lime juice. Add ice, simple syrup and rum. Shake until cold.
In a highball glass filled with ice, add peach puree. Strain cocktail into glass and stir to combine. Top with club soda.
