Ingredients & Substitutions
- Cucumber juice – We used english cucumbers for their mild sweet flavor. These cucumbers make the perfect choice for a margarita being seedless and their skin is thinner and less waxy than other types of cucumbers. No peeling required for this recipe!
- Tequila – For this recipe, I like to use silver or blanco tequila because its flavor blends best with the cucumber juice, but use whatever tequila you prefer.
- Cointreau – Triple sec or any other orange liqueur will work for this recipe, such as Grand Marnier or dry curaçao.
- Lime juice – Fresh squeezed lime juice is best, but store bought will also work if you’re in a pinch.

What kind of cucumber is best for cocktails?
English cucumbers make the best margaritas. They are mild, sweet and seedless with a thinner skin (less bitter) than most other cucumbers.
How do you cut cucumbers for cocktails?
For English cucumbers there is not much prep for this recipe, just cut off the ends, chop into smaller pieces and blend. If you are using a cucumber with seeds, peel at least half of the skin, remove the ends and slice the cucumber in half lengthwise. Remove the seeds and chop into pieces before adding to the food processor or blender.
Do cocktail cucumbers need to be peeled?
If you prefer you may peel the cucumbers. If you are using an english cucumber there is no need to peel, though for all other cucumbers we would recommend removing at least half of the skin to reduce bitterness. Leaving some of the skin adds to the color of the margarita for a pretty presentation but is not necessary.

Cucumber Margarita
Ingredients
- 2 ounces tequila
- 2 ounces cucumber juice*
- 1 ounce lime juice
- 1 ounce orange liqueur, such as Cointreau
- 1/2 ounce agave nectar, optional
- For garnish: salt, cucumber slice
Instructions
- Make the cucumber juice. Peel two English cucumbers and add them to a blender. If you want the juice to be darker, leave on a little bit of skin.Blend until smooth and strain the juice. Discard any remaining pulp. 2 cucumbers should yield roughly 2 cups of cucumber juice.
- Shake your cocktail. Fill a cocktail shaker with ice. Add tequila, cucumber juice, lime juice, orange liqueur and agave. Cover and shake until cold.
- Garnish and serve. Use a lime wedge to rim a cocktail glass with salt and fill with ice. Strain cucumber margarita over the ice and garnish with cucumber or lime slices before serving.
