Why we love the piña verde
We all know that I’m a huge fan of Chartreuse, and I’ve been rationing my bottle of the elusive herbal liqueur, but when I stumbled across this piña colada variation, I couldn’t resist giving it a try.
This cocktail feels right at home on a sunny afternoon, but the herbal twist adds a cozy depth that’s perfect for sipping when you need a little tropical escape – even in the middle of winter.
The combination of tropical pineapple, zesty lime, and luscious cream of coconut is the kind of thing that makes you close your eyes and imagine you’re somewhere with palm trees swaying in the breeze.
Ingredients & substitutions
- Chartreuse – Green Chartreuse is a bold, herbal French liqueur made by Carthusian monks with a secret recipe of 130 plants, giving it a complex flavor and vibrant green color.
- Coconut cream – Coconut cream is super thick, sweetened and rich with bold coconut flavor. If you’re looking for sweetened coconut cream, check the baking or cocktail mixers aisle.
- Pineapple juice – Canned pineapple juice works just fine for this recipe.
- Lime juice – Fresh squeezed citrus is always best for cocktails.

Piña Verde

- 1 1/2 ounces green chartreuse
- 1 1/2 ounces pineapple juice
- 3/4 ounce cream of coconut
- 1/2 ounce lime juice
- For garnish: fresh mint sprig
Instructions
- Fill a cocktail shaker with ice. Add the chartreuse, pineapple juice, cream of coconut and lime juice. Cover and shake vigorously until cold – at least 30 seconds.
- Strain into a cocktail glass filled with crushed ice and garnish with a mint sprig.
