Why you’ll love this strawberry bellini
A traditional bellini is a simple yet elegant cocktail made with peach purée and Prosecco. Originating from Venice, Italy, it’s a staple at brunches and celebratory occasions. This version swaps the peaches for fresh strawberries, adding a beautiful red hue and a burst of berry flavor.
The best part about this cocktail is that you can make (or buy) the strawberry purée ahead of time, so you can mix these up in minutes when you’re ready to serve them.

Ingredients & substitutions
- Strawberry purée – We made our own strawberry purèe, but you can use a store bought version if you prefer.
- Prosecco – Prosecco is the classic choice, but any dry sparkling wine works. Want a non-alcoholic version? Swap the Prosecco for sparkling water or non-alcoholic sparkling wine for a delicious strawberry spritzer.

mel’s cocktail tips & tricks
- While fresh, ripe strawberries are ideal for this recipe, you can easily get away with frozen strawberries to make your purée. They are usually frozen at peak ripeness so their flavor will be great, and you’re blending them anyway, so no need to worry about texture.
- Make sure your prosecco is chilled ahead of time so your drinks are nice and cold!
